Soneva Fushi to Welcome ‘Hunter Gatherer’ Chef, Thomas Rode Andersen
Maldives Promotion House – Soneva Fushi has announced that they will be welcoming Michelin Star, Danish Chef, Thomas Rode Andersen, as a guest chef at the resort in March this year.
Chef Andersen is one of Denmark’s leading chefs. Head Chef and Managing Director of Restaurant Kong Hans Kaelder, the oldest gourmet restaurant in Copenhagen, Chef Andersen has published several books, has a column in Berlingske Tidende (the Danish national newspaper) and has hosted more than 200 cooking programmes on Danish television.
From the beginning of his career Chef Andersen has sought to dissolve the pretensions surrounding gourmet dining, creating instead a relaxed ambience for his guests to enjoy his fresh and delectable menus.
He supports Soneva’s guiding principal of SLOW LIFE – sustainable, local, organic, wellness, learning, inspiring, fun, experiences, using only the freshest of local ingredients, sustainably sourced. Chef Andersen’s passion for a healthy and active lifestyle has led to his recent creation of Paleo Fast Food, in Copenhagen – a nutritional diet plan based on the ‘hunter gatherer’ premise that human health and well-being is one that resembles our basic ancestral diet, that of fish, meats, vegetables, fruit, roots, and nuts. It excludes anything processed.
Thomas Rode Andersen will create a Gala Dinner for guests of Soneva Fushi on the evening of March 8th and will repeat the experience for guests of Six Senses Laamu on March 9th. He will work with Soneva Fushi’s executive chef Bjorn van der Horst who has plied his trade across the world in some of the world’s finest restaurants including Eastside Inn, La Noisette and The Greenhouse in London – the latter two of which gained Michelin stars during his tenure. They will use local Maldivian ingredients, herbs and vegetables from the resorts’ organic gardens and an abundance of locally caught seafood.
