Hideaway Beach Resort appoints acclaimed French Chef Sebastien Pinson as Executive Chef

Hideaway Beach Resort & Spa has appointed acclaimed French Chef Sebastien Pinson as its new Executive Chef.
French-born Sebastien Pinson brings 20 years of culinary experience to the Hideaway team. He has worked in famous hotels and resorts around the world including in Europe, Asia, United States, South America and the Caribbean. During this time, thanks to hard work and passion, Chef Sebastien has received several awards, including a coveted Michelin star.
Since joining Hideaway, Chef Sebastien has wowed and impressed the resort’s guests with his culinary delights. Bringing in fresh ingredients from the resort’s very own garden, Sunset Pool Cafe now has a mouthwatering watermelon and tomato gazpacho, Samsara Restaurant features a new Teppanyaki set menu, whilst Meeru Bar & Grill has seen some extensive re-working of the pizza dough recipe.
“We are pleased to have Chef Sebastien onboard and to lead the team. With him, I am excited to see his exceptional creations for our guests that will delight and amaze their senses during their stay,” Christian Szabo, General Manager of Hideaway Beach Resort, was quoted in a statement, as saying.
As Chef Sebastien takes charge of the four different restaurants and bars at Hideaway, guests can experience an elevated dining experience, and feel how the perfectly coordinated interplay of food, wine, ambience and service can make the meal a memorable evening.
“The world is full of flavours, colours and smells. Each country has its uniqueness, every chef has his little secrets — we should always make the best of it. My team and I are very happy that we can all use our diverse experiences and backgrounds. It always gives our guests the unimaginable culinary experience they seek,” Chef Sebastien said.
In addition to perfecting the already popular culinary offerings at all of the resort’s restaurants, Chef Sebastien will personally delight guests. Lucky guests can watch the master chef cook in one of the restaurants of the resort, as he refines his signature dish according to your individual wishes.

Hideaway Beach Resort is located on the crescent-shaped island of Dhonakulhi in the northernmost Haa Alif atoll of the Maldives, 290km from capital Male. Characteristic features are unique quietness, comfort and privacy in a 297,000sqm tropical setting.
A total of 103 spacious villas in 10 categories are situated at a great distance from each other, either amongst evergreen tropical vegetation or above the turquoise blue lagoon. A personal butler is available in almost all villa categories and fulfils all guest wishes. The resort’s culinary diversity is reflected in four restaurants and bars.

Renowned master chocolatier Patrick Gelencser will bring a touch of indulgence to Niyama Private Islands Maldives, hosting exclusive tasting sessions from February 21-25, 2025.
Born into a legacy of chocolate craftsmanship, Gelencser represents the third generation of the esteemed House of Gelencser. As one of only 15 chocolatiers in France specialising in bean-to-bar production, he has received numerous international accolades. His meticulously crafted creations are so exceptional that they are showcased in a chocolate museum in the Loire Valley, as well as in nearly half a dozen boutiques.
Guests at Niyama will have the rare opportunity to witness Gelencser’s artistry firsthand as he curates a series of tasting experiences set against the resort’s breathtaking backdrops.
- Single-Origin Chocolate & Rum: The terroir of the cocoa bean influences its flavour, resulting in creamy, fruity, citrusy, or nutty notes. Guests will explore the origins of Gelencser’s single-origin chocolates, expertly paired with the finest Caribbean and South American rums, in a setting like no other—perched half a kilometre out to sea amidst the sunset.
- Ganache, Praline & Whiskey: A masterful contrast of textures awaits with smooth, creamy ganache and nutty, complex pralines, complemented by a premium selection of whiskeys. This refined post-dinner experience will be hosted at the heart of the island of Chill.
- Tapas, Chocolate, Wine & Port: For the grand finale, guests will embark on a full gastronomic journey, surrounded by lush tropical beauty. The experience begins with tapas and wine, followed by a curated selection of chocolates and port, personally presented by Gelencser to an intimate gathering of 12 guests.
