Originally hailing from France, Joublanc discovered his passion for the culinary arts early on. His journey began with formal education in Hospitality Administration and Management at the prestigious Culinary Institute of America, setting the stage for a remarkable career trajectory.
Joublanc’s dedication to his craft became evident during his tenure as Sous Chef at Gordon Ramsay’s esteemed establishments, where he honed his skills and developed a keen understanding of the finer aspects of culinary excellence. His culinary journey has taken him across continents, leaving an indelible mark on some of the world’s most renowned luxury hospitality brands.
In his new role as Executive Chef at Baglioni Maldives, Joublanc will spearhead menu designs and introduce innovative concepts aimed at elevating the overall guest experience. Dubai-based artisanal brand FIX Dessert Chocolatier, renowned for its viral chocolate creations, has partnered with JOALI Maldives – the Indian Ocean’s first art-immersive luxury island resort. Starting 2 July 2025, guests at JOALI Maldives will have the exclusive opportunity to indulge in FIX’s signature creation, The Original Dubai Chocolate, marking the first time the coveted dessert will be available outside the UAE.
Famed for its bold creativity, intricate layering, and unforgettable textures, FIX has redefined the modern dessert experience. This collaboration brings together two worlds of sensory delight – the imaginative world of FIX and the refined, story-driven luxury of JOALI Maldives.
As part of this partnership, FIX introduces Time To Mango, a brand-new chocolate bar inspired by tropical fruits, warm breezes, and the playful spirit of summer. Blending mango-forward flavours with nostalgic childhood treats and a whimsical touch of popping candy, the creation delivers a multi-sensory experience wrapped in rich chocolate.

Known for turning heads and rewriting the rules, Beckaly Franks is no stranger to shaking things up. From co-founding the iconic The Pontiac in Hong Kong—featured on Asia’s 50 Best Bars list for seven straight years—to launching the Hungry Ghost group and buzzy venues like Call Me AL and ARTIFACT, Franks has long been a driving force behind Asia’s cocktail renaissance. The collaboration kicks off with two exclusive guest shifts at SIP on 24 and 25 July, where Franks will serve up a mix of her iconic signature and bespoke creations crafted just for the island. Think sun-drenched flavors, unexpected textures and bold spirits made to match the lagoon views. On 27 July, the experience moves to the resort’s noon-to-moon social hub, WET Deck, for an elevated daytime poolside revelry—an atmospheric day of sensory storytelling, boundary-pushing cocktails, and barefoot glamor under the vibrant Maldivian sky.
