A culinary discovery like no other
The Ritz-Carlton Maldives, Fari Islands presents a culinary exploration of Germany’s legendary Black Forest with Chef Patron, Viktoria Fuchs – an 8th generation gastronome who owns and manages the Spielweg estate in Münstertal since 1861. Explore the Black Forest with Viktoria this November 24th and 25th as we host an exquisite five-course wild game menu at Beach Shack and a tasting of various meats and cheese from their smoking chamber.
Following in the footsteps of her forefathers, renowned hunters and cooks and founding members of the elite Jeunes Restaurateurs, Viktoria helms the kitchens at Spielweg serving an inventive menu of wild game and herbs from the Black Forest. From the family’s cheese factory, an age-old craft is kept alive with milk from the Hinterwälder cows that graze on a farm situated 1,000 metres above sea level. As the family continues to support the local nature park and farms, Viktoria has also released their own gin – Spielweg Gin, refined with juniper, blueberries, cranberries, rowanberries, mountain herbs and lemon peel all sourced from the Black Forest. On a journey to share her family’s passion and her experience with game cuisine from living in the Black Forest, Viktoria’s book – FuchsteufelsWILD, which won the German Cookbook Award is an ode to the long tradition of game cuisine in Spielweg.

Whilst at The Ritz-Carlton Maldives, Fari Islands guests can look forward to an evening with Viktoria and a menu of Cod Ceviche with coriander, coconut and roasted corn, Wild Boar Dim Sum, Pink-roasted Saddle of Venison with mango, Carrot Cake with physalis, passion fruit and sour cream ice cream and ending with a classic slice of Gugelhupf served with Spielweg Gin. Hosted in our wine cellar, guests can also sign up to a tasting class of sliced mountain cheese from Spielweg’s smoking chamber as well as Coppa and Beef Ham – meat cured for two months and then dried in a noble mold culture.

Dubai-based artisanal brand FIX Dessert Chocolatier, renowned for its viral chocolate creations, has partnered with JOALI Maldives – the Indian Ocean’s first art-immersive luxury island resort. Starting 2 July 2025, guests at JOALI Maldives will have the exclusive opportunity to indulge in FIX’s signature creation, The Original Dubai Chocolate, marking the first time the coveted dessert will be available outside the UAE.

As part of this partnership, FIX introduces Time To Mango, a brand-new chocolate bar inspired by tropical fruits, warm breezes, and the playful spirit of summer. Jumeirah Olhahali Island welcomes Shimmers’ Chef Emanuele for exclusive culinary residency this July

Jumeirah Olhahali Island has announced a culinary residency in collaboration with Chef Emanuele De Leo, Head Chef of the award-winning Shimmers at Jumeirah Mina Al Salam in Dubai. Taking place from 7 to 10 July 2025, this exclusive experience will bring the vibrant flavours of the Mediterranean to the Maldives through a specially curated tasting-style menu.
Following a stint as Sous Chef at L’Olivo at Al Mahara, the two Michelin-starred restaurant at Jumeirah Burj Al Arab, Chef Emanuele took up his position as Head Chef at Shimmers in 2023. There, he leads the kitchen, where his menu pays homage to his Sicilian heritage, while embracing bold, contemporary interpretations of classic Mediterranean cuisine. Under his direction, Shimmers has earned recognition from Gault&Millau UAE in 2025, a testament of the restaurant’s elevated dining experience and Chef Emanuele’s distinctive culinary vision. With a strong focus on seasonality, he draws inspiration from the freshest market produce, transforming each ingredient into flavour-driven, elegantly presented creations.

For his residency at Jumeirah Olhahali Island, Chef Emanuele has crafted a bespoke menu that fuses Greek influences with his Sicilian roots, showcasing refined coastal flavours and thoughtfully sourced seasonal ingredients. In true Shimmers fashion, the evening will be presented as a series of small, shareable plates, designed to bring guests together around the table. Highlights include a fresh cauliflower salad, zingy tuna tartare, and grilled octopus with Santorini fava. These are followed by indulgent mains such as slow-braised beef cheek paired with celery purée and red wine jus, alongside orzo with red prawns, lemon, and caviar. The experience concludes, with a duo of desserts: Greek yoghurt ice cream and orange crème brûlée, offering a refreshing and indulgent finale.
