OZEN by Atmosphere introduces Guy Charbaut Champagne
Despite being nestled amongst lush exotic scenery in the middle of the Indian Ocean, guests of OZEN by Atmosphere at Maadhoo in the Maldives are treated to some of the best culinary products from around the world.
The latest addition to OZEN’s extensive beverage menu is a selection of Guy Charbaut Champagne from one of France’s finest wine-making regions, Mareuil-sur-Aÿ. This region is known worldwide for producing superior quality Terroir Champagne.
From mid-January, all guests of the five-star luxury OZEN will be able to enjoy Guy Charbaut Champagne Selection Brut and Guy Charbaut Rose Brut – Premier Cru, as part of the generous inclusions within the resort’s luxury all-inclusive Indulgence Plan.
“As part of our ‘Joy of Giving’ ethos, we have chosen to introduce a wonderful new Champagne brand to our already impressive selection of wines available at OZEN: Guy Charbaut,” Venkata Giri, Chief Operating Officer at Atmosphere Hotels & Resorts, was quoted in a statement, as saying.
“We want our loyal guests to enjoy only the best Champagne while staying with us – that is the OZEN difference. We will not cut corners when it comes to providing the very best for our guests, who expect and deserve to enjoy top-quality food & beverages.”
The Champagne Selection Brut features notes of mandarin leaves, pine bark and when aired unveils intensely spices and peppered notes. The sensation of freshness and roundness prevails on the palate, perfect as an aperitif.
The Rose Brut – Premier Cru airs intense red fruit notes of raspberry and strawberry, alongside touches of pink grapefruit and blood orange. It pairs remarkably well with fresh and tangy desserts.
The Guy Charbaut vineyard was established by the Charbaut family in 1936, and now into its third generation of winemakers, continues to produce some of the world’s finest-quality Champagne.
The vineyard, consisting of Pinot Noir, Meunier and Chardonnay varieties, covers over twenty hectares. The major part extends through the Premiers Crus villages of Mareuil-sur-Aÿ, Bisseuil and Avenay, with the rest lying in the villages of Viviers-sur-Artaut and Landreville. The exceptional quality of these terroirs favours the production of varietal wines which reveal their unique character. With a steadfast commitment to producing quality Champagne, the Charbaut family produces only a limited quantity of Champagne per year, which is in high demand by wine lovers.

Sun Siyam Iru Fushi hosts Michelin-starred Chef Robin Pietsch

The residency was hosted at Islander’s Grill, the resort’s beachfront destination, where the “Land & Sea” menu showcased technical precision through signatures such as Hand-Cut Beef Tartare finished with a silken yolk and garden botanicals; Lightly Cured Cod jewelled with Beluga Caviar; and a succulent Beef Cheek with Seared Foie Gras and winter truffle.
The experience concluded with a Topfen Dumpling accented by papaya, yogurt, and almond. The menu featured curated pairings, including French Champagne and a selection of prestigious French and Italian wines.

NH Collection Maldives Reethi Resort has announced the grand opening of Caravela, its signature fine dining restaurant, welcoming distinguished guests to an extraordinary culinary voyage that redefines gastronomy in the Maldives.

The launch was marked by a memorable and elegant opening evening, graced by guest of honour Loredana Groza, one of Romania’s most celebrated and influential artists. Renowned internationally for her iconic music career, enduring cultural impact, and dynamic stage presence, Loredana brought a touch of glamour and prestige to the occasion, elevating the celebration into a truly remarkable event.

A First-of-Its-Kind Culinary Concept
Caravela stands as a pioneering concept in the Maldives, as the first restaurant to seamlessly fuse Spanish and Maldivian cuisines into a cohesive and immersive fine-dining experience.
Inspired by the legendary maritime voyages that once connected Spain to the Indian Ocean, the restaurant draws its name and spirit from the historic caravels that charted these routes. The concept is built around a symbolic culinary journey, where flavours, ingredients, and techniques converge to tell a story of exploration, trade, and cultural exchange.

A Menu That Tells a Story
At the heart of Caravela lies a meticulously crafted multi-course tasting experience, where each dish represents a chapter in a historic voyage. Caravela will ultimately present three distinct tasting menus, each inspired by the great routes of the Age of Discovery:

Each menu unfolds as a chronological culinary journey, inviting guests to experience the spirit of exploration in sequence, much like the navigators who first charted these paths.
The current experience is presented as a seven-course degustation menu, thoughtfully curated to deliver depth, balance, and storytelling in every plate.

NH Collection Maldives Reethi Resort pioneers underwater rum ageing project
For centuries, the maturation of fine spirits has been a land‑bound ritual, guided by oak, air and time. At NH Collection Maldives Reethi Resort, that tradition turned seaward. In partnership with Planteray Rum, widely regarded as one of the world’s best premium rum brands, the property has completed the world’s first certified underwater ageing of rum in glass bottles by a resort, with the inaugural batch earning glowing evaluations for its depth and complexity.

For twelve months, while the resort itself was undergoing a transformation, the rum matured in a gentle rocking motion, shaped by hydrostatic pressure, slow currents and the constant temperature of the deep. Resting in custom‑designed metal cages ten metres beneath the surface, a selection of Planteray Rum bottles lay undisturbed in their ocean cellar, at a site identified by our resident Aquafanatics dive experts as sheltered from harsh currents, protected from excessive sunlight and calm enough to let time do its work uninterrupted.
Brought ashore for the resort’s reopening on 21 December 2025, the sunken treasure, still bearing the fingerprints of marine life that had embraced it during its underwater repose, revealed a character that surprised even seasoned experts.

“Underwater, time and conditions interact differently with the liquid. After a year beneath the sea, the rum has developed enhanced roundness, smoothness and complexity,” said Fannie Thibaud, Deputy Master Blender at Planteray Rum.
“A passion project and an ambitious experiment, our sea-aged rums bring together innovation, artistry and storytelling in every sip,” said Valentin Osolos, General Manager at NH Collection Maldives Reethi Resort. “We couldn’t have done it without our partners at Planteray Rum, who immediately recognised the potential to create something the industry hadn’t seen before and helped us reimagine what craftsmanship can look like in the Maldives.”

By choosing to surrender control to nature and letting it work in patience and silence, with only occasional dives to check the integrity of the cages, the spirit becomes inseparable from its setting in the UNESCO‑protected Baa Atoll.
Buoyed by the success of this inaugural vintage, Planteray Rum has already entrusted the resort with new varieties, now undergoing their own year‑long transformation beneath the waves. The programme is set to become a permanent feature of the resort’s culinary and mixology offering. At Handhuvaru, the resort’s signature mixology concept, guests can experience the new maritime vintage neat or in imaginative cocktails such as Chai on the Rocks, combining aged XO rum with warming chai spice and subtle tropical sweetness, or Mocha Molasses, an intense expression of overproof rum layered with espresso and dark chocolate.
