Recipe From Island Hideaway: Papardelle Mare e Monti

Our recipe for this week is presented by Tobias Fetz, Executive Chef of Island Hideaway at Dhonakulhi Maldives, Spa Resort & Marina.

Ingredients

  • 450 gram Papardelle Pasta
  • 200 gram fresh Boletus Mushrooms
  • 3 pieces U6 Tiger Prawns
  • 1 garlic clove
  • 2 diced tomatoes
  • 150 gram Mascarpone
  • salt and pepper

Directions

  1. Cook pasta, drain and set aside.
  2. Heat a pan, add a couple tablespoons olive oil or butter and lightly fry your garlic clove cut into slices.
  3. Add diced Boletus Mushrooms and sauté.
  4. Next step is adding your prawns, stir and wait till they turn white (do not overcook or they´ll be dry and tasteless).
  5. Add your diced tomatoes, a pinch of salt and a bit of sugar.
  6. Once tomatoes have lost most of its water add cream and pepper, mixing it all together and let simmer for 5 minutes.
  7. Add your cooked and drained pasta, mix well and enjoy!

Swiss Chef Tobias Fetz has worked in various international luxury hotels and restaurants. After graduating from Hotel Management school of Montana, Lucerne in Switzerland, he worked in the Michelin Starred Restaurant Gupf in Rehetobel, Switzerland as the Executive Sous Chef. After two years he moved to Canada to a work as an executive chef at Relais & Chateaux Hotel in Quilchena, B.C., Canada.

He also spent about a year at the Executive Sous Chef at Park Hyatt Dubai. Chef Tobias has worked at InterContinental Warsaw in Warsaw, Poland, Marriott Hotel Frankfurt in Frankfurt, Germany, Café Aubergine in Kingston, Jamaica and Dhahran International Hotel Akrabiah, in Saudi Arabia as Executive Chef. He has been a consultant for Hacienda Lifestyle Resorts in Puerto Plata, Dominican Republic before joining Island Hideaway Maldives.
