True summer holiday delicacies at Kuramathi Maldives’ Palm restaurant

Kuramathi Maldives has introduced a selection of classical European fish ragout recipes at its Palm restaurant.

The four unique dishes created by the creative food production team at Palm comprise of Belgian, Spanish, Italian and French influences on reef fish caught fresh in the Maldivian waters and served piping hot on a special terracotta plate. The idea is to present the taste of classical European ‘fisherman’ recipes paired with locally caught fresh fish of the Indian Ocean, savoured under the towering coconut trees of Palm.

“With the fast paced world introducing healthy eating trends and robust lifestyles, we are keeping up in a number of ways,” an announcement by the resort read.

Kuramathi is one of the first resorts to open in the Maldives and is part of Universal Resorts of Universal Enterprises, a 100 percent Maldivian company and the pioneers of tourism in the Maldives.

Born in Burgundy, France, into a family of artists, Chef Doyen discovered his passion for pastry during childhood, turning his family kitchen into his first studio. A graduate of the prestigious École Nationale Supérieure de la Pâtisserie, his career spanning two decades has taken him through Michelin-starred kitchens and international stages, earning him recognition as a leading figure in modern patisserie.

Renowned for his sculptural desserts and refined French craftsmanship, Chef Doyen’s creations merge technical precision with emotional expression, transforming pastry into a form of edible art. His innovative approach has led to collaborations with some of the world’s most iconic luxury maisons—including Cartier, Marc Jacobs, La Prairie, Dior, Chanel, Louis Vuitton, Vacheron Constantin, and Hermès—alongside bespoke commissions for Range Rover and Vogue.
