Internationally acclaimed Chef Eyck Zimmer unveils bespoke menu for OUTRIGGER Maldives Maafushivaru Resort

Amidst the idyllic setting at OUTRIGGER Maladives Maafushivaru Resort, culinary virtuoso Eyck Zimmer is set to be a celebrity guest chef on 22 and 29 January 2024. Today, he announced the menu for this exclusive culinary journey – which is sure to enchant the palates of discerning OUTRIGGER guests.

Chef Zimmer will curate two extraordinary five-course dining experiences at the resort’s Art-i-san restaurant, collaborating with the esteemed Executive Chef, Christopher Long and his culinary team.

Each meticulously crafted dinner will commence with a delightful amuse bouche, featuring snail and parsley tart with black garlic and garden herbs, setting the stage for an unforgettable culinary soiree. Guests will indulge in a decadent starter of crab “Mille Feuille” with avocado, pink pepper and caviar crème fraîche, followed by an aromatic carrot soup with Indian shrimps, orange confit and lime yogurt.

The culinary odyssey continues with local fish tartare, calamansi with crispy chicken skin and bonito flakes, offering a harmonious symphony of flavours. A spectacular main course of quail and foie gras with aromatic passion fruit polenta, toasted sesame and ginger jus, elevates the dining experience.

The grand finale will enchant taste buds with a divine dessert – coconut and lime panna, crispy banana wonton, rum and raisin syrup and vanilla ice cream, expertly crafted to leave an indelible mark on the senses. To enhance the haute cuisine experience, a skilled sommelier will guide guests through meticulously curated wine pairings on both occasions.

Hailing from Germany, Eyck Zimmer stands as one of the foremost luminaries in the world of contemporary haute cuisine. His illustrious career has been adorned with accolades, including the prestigious Meilleur Ouvrier de Grande Bretagne in 2000, British Chef of the Year in 2006 and Portuguese Chef of the Year in 2008. His remarkable contributions to French culture and culinary excellence were acknowledged by the French Government, bestowing upon him the esteemed title of Chevalier du Mérite Agricole in 2014. Furthermore, he earned the distinguished title of Master of Culinary Arts from the Royal Academy of Culinary Arts of Great Britain.

Zimmer’s culinary journey has been punctuated by stints in some of the United Kingdom’s most renowned kitchens, including Claridge’s, The Dorchester, The Ritz and The Savoy. His culinary prowess has also left an indelible mark on five-star establishments in Switzerland, Portugal, Serbia and Germany.

Presently, Eyck Zimmer serves as the Director of Culinary at the illustrious Jockey Club in Hong Kong.

His dedication to his craft is epitomised by his motto tattooed on his arm: “Born to cook. No plan B!”

OBLU NATURE Helengeli by SENTIDO unveils chef-led 9-Hands Dinner experience

OBLU NATURE Helengeli by SENTIDO has announced a 9-Hands Dinner event scheduled to take place from 25 to 27 May, offering a curated dining experience as part of its guest programme.

The event will feature a multi-course menu developed by three chefs representing Egypt, Madeira and the Maldives. Each chef will present dishes reflecting their respective culinary backgrounds, combining different techniques and flavour profiles within a single dining concept.

The dinner is positioned as an interactive culinary experience, bringing together elements of storytelling and presentation alongside the menu. According to the resort, the concept is designed to highlight both innovation and traditional influences in cuisine.

The experience will be included within the resort’s plan for in-house guests, forming part of the overall stay offering.

Commenting on the event, General Manager Alain Trefois stated that the initiative reflects the resort’s focus on expanding guest experiences beyond standard dining formats. He noted that the event provides an opportunity for guests to engage with culinary presentation in a structured setting.

Anupam Banerjee, Vice President Food & Beverage at Atmosphere Core, said the collaboration brings together different culinary influences, combining regional ingredients and techniques into a single dining programme.

CROSSROADS Maldives brings back ‘No Guests, Just Chefs’ event

From 16th to 18th April 2026, CROSSROADS Maldives once again became the epicentre of global culinary excellence as it hosted the second chapter of the exclusive “No Guests, Just Chefs” event. Following the success of its inaugural edition last year, this unique gathering brought together around ten Michelin-starred chefs from across the world for a private, immersive adventure designed purely for connection, creativity, and relaxation.

Curated by award-winning Chef Dharshan Munidasa, the concept was simple yet powerful, an invitation extended to fellow chefs to come to the Maldives, not to perform, but to unwind, socialise, and celebrate their craft. Hosted across his renowned restaurants, Ministry of Crab, Carne Diem, and Nihonbashi Blue at The Marina, the event created an intimate space where culinary talents could meet under the same roof and enjoy each other’s company away from the demands of their kitchens.

Reflecting on the journey, Chef Dharshan shared, “This is not about performance, it’s about connection. It’s about good food, good wine, and good company. This is what travelling to the Maldives to truly unwind should look like.” He further explained that the idea behind the event was also to introduce the Maldives in a different light, showcasing not only its natural beauty, but also the vibrant lifestyle and culinary offerings available at CROSSROADS Maldives and across his three restaurants within the destination.

Chef Dharshan expressed his appreciation to all participating chefs and extended his gratitude to the three partner resorts, SAii Lagoon Maldives, Curio Collection by Hilton, Hard Rock Hotel Maldives, and SO/ Maldives for their role in hosting guests at their event. Special acknowledgement was given to the leadership teams, including General Manager Alex Traeger of SAii Lagoon Maldives, General Manager Frederic Lebegue and General Manager Olivier Moies-Delval of SO/ Maldives, whose collaboration ensured a seamless and memorable experience for all involved.

The concept not only fosters collaboration but also allows participants to fully immerse themselves in the destination without disruption.
