Ithaa, Still a World Famous Wonder
Maldives Promotion House – On 15th April 2011, Ithaa, the world’s first all-glass under-sea restaurant at the Conrad Maldives Rangali Island celebrated its sixth anniversary. An icon in the country, Ithaa has welcomed thousands of diners, countless marriage proposals and an endless stream of the curious, wanting to see the magic of the underwater world.
Sitting five metres below the waves of the Indian Ocean, surrounded by a vibrant coral reef and encased in clear acrylic, the restaurant has hosted over 43,800 diners, 151 under-sea “Renewal of Love” ceremonies and has been witness to the consumption of over 14,235 bottles of champagne since it opened.
Over the years, gourmets will have seen continual changes in the menu, which is updated each year to ensure that repeat diners always find something new to treasure. Executive Chef Nicolas Boutin launched the latest incarnation of the dinner menu recently which features six, themed courses.
Inspired by his heritage, the menu shows a definite shift towards French dishes, infused with just a touch of Asian elegance. A lighter, three-course lunch menu is also available while the merely curious can visit the restaurant for 11:00AM cocktails.
The six-course dinner menu is priced at USD320 per person and lunch is USD195 including one glass of champagne.
World-renowned wine-makers and Chefs have also flocked to Ithaa to host numerous food and wine events with highlights including visits from Hubert de Billy from Pol Roger, Frederic Engerer of Chateau Latour, Damien Motte from Louis Roederer, Hubert de Boüard de Laforest of Chateau Angelus and Chef Mathieu Pacau of acclaimed Paris restaurant L’Ambroisie, to name but a few.
Using aquarium-inspired technology, “Ithaa”, translating to “pearl” in the Maldivian language of Dhivehi, was built to allow guests to enjoy the colour, clarity and beauty of the Indian Ocean without getting their feet wet.
Ithaa consists of three five-metre wide 125 millimetre thick glass arches sitting one metre below the sea level during low tide and almost two metres at high tide, the widest constructed underwater structure in the world at the time of building. The inside of the restaurant is nine metres long and five metres wide and sits on four “legs”, 8 metres above the seabed.
Set in a picturesque corner of the Maldives, the Conrad Maldives Rangali Island combines three distinct resort experiences on two islands, linked by a bridge and surrounded by a vibrant coral reef and lagoon. Far from the typical poolside bar, the revamped Sobi Bar offers a unique experience where artistic cocktails take centre stage. Standard drinks are replaced with Tao Zrafi’s creations, which expertly blend local Maldivian flavours with surprising twists, providing a sensory journey for visitors.

To commemorate the launch of the Mixology Garden, Oaga Art Resort is hosting several special events:
- Cocktail Masterclasses (November 29 and December 6): Guests can learn from Tao Zrafi himself, discovering the secrets behind his innovative cocktails.

JEN Maldives Malé by Shangri-La has become the first to introduce a 0.0 cocktail series in the Maldives, bringing the global trend of sophisticated non-alcoholic beverages to the heart of Malé.
Responding to the growing demand for refreshing alternatives to traditional alcoholic drinks, JEN Maldives has developed a range of 0.0 cocktails using Sober Spirits.
