Recipe from Hilton Maldives: Snapper Carpaccio

Our recipe for this week is Local Snapper Carpaccio from Trio Restaurant at Hilton Maldives Iru Fushi Resort & Spa

Local Snapper Carpaccio

  • 100gms Snapper fillet without skin
  • 5gms Salmon roe
  • 30gms Fresh fennel shavings
  • 30gms Baby rocket
  • 80gms Tomato tartar
  • 30ml Cherry tomato dressing
  • 15ml Extra virgin olive oil
  • Salt and pepper

Cherry Tomato Dressing

  • 300gms Ripened cherry tomatoes
  • 30ml While balsamic vinegar
  • 200ml Extra virgin olive oil
  • Salt and pepper

Tomato Tartar

  • 700gms Tomatoes, skinned and with seeds removed
  • 10gms Chives, finely chopped
  • 5gms Dill, finely chopped
  • 200gms Lemon
  • 75ml Olive oil
  • Salt and pepper

Directions

  1. Cut the snapper into very thin slices and arrange carefully in the shape of a round disk on the plate, keep chilled
  2. For the tomato tartar, cut the skinned tomatoes into very fine cubes (Brunoise (approx 1 – 2mm each side)), mix with the rest of the ingredients and set aside
  3. For the cherry tomato dressing, blend all of the ingredients in a mixer, set aside and keep chilled
  4. For presentation, drizzle the cherry tomato dressing around the snapper and scatter the tomato tartar on top of the snapper
  5. Scatter the rocket, fennel shavings and salmon roe over the dressing and tartar
  6. Finally, garnish with finely sliced baby red radish and colourful edible flowers
