JOALI BEING welcomes award-winning Chef Bettina Campolucci Bordi for unforgettable sustainability-driven culinary experience

On the pristine isle of Bodufushi in Raa Atoll, JOALI BEING – the first wellbeing island of its kind in the Maldives – is partnering with distinguished plant based and sustainability-led chef, Bettina Campolucci Bordi of Bettina’s Kitchen, this festive season.

An authority on green cuisine, Bettina’s residency will encompass a community cooking workshop for women from the archipelago’s island of Dhuvaafaru – in support of local NGO, Dhuvaafaru Zuvaanunge Jamiyyaa – as well as an exclusive dining experience and a cooking workshop for sojourners staying within the Maldivian oasis; both hosted by the culinary aesthete herself.

The intimate workshop – taking place on 30 December at The Culinary Learning Centre is in support of JOALI BEING’s ‘Joy of Empowering Women through Farming’ initiative, which aims to provide training and raise awareness about installing hydroponic systems within the home, enabling women to grow vegetables and generate income. The selection of participants will be a collaborative effort between the Dhuvaafaru Women’s Development Committee and the NGO.

The imaginative JOALI BEING x Bettina’s Kitchen dining experience – exhibiting the visionary’s eco-conscious artistry – will take place on 29 December at FLOW Restaurant traversing a menu that boasts a significant focus on foraged ingredients, locally sourced where possible. From a three-way pumpkin platter to a Garden of JOALI celebration of vegan fare, to an adaptogenic sweet concoction of cacao nibs, chocolate mousse and aquafaba meringue, the spread is sure to tantalise the palates of island residents.

“It’s truly an honour to unite with JOALI BEING as we craft a menu that’s a testament to sustainability, harnessing the bounty of local, seasonal produce. Every dish is not just a meal, but a story – influenced by culture, the beauty around us, and the heart of each ingredient. Together, in our workshops, we’ll explore and celebrate the magic of plant-based cuisine, igniting passion and curiosity in every bite,” says Bettina Campolucci Bordi.

JOALI BEING was designed to seamlessly blend with its natural surroundings; architects worked in unison with multidisciplinary design studio, Autoban, and interior design company, Atolye 4N – who also led the design concept of sister destination, JOALI Maldives – to preserve the local landscape with the goal to achieve harmony by eliminating negative vibrations and enhancing the energy flow of the island; whilst ensuring the forest and wildlife remained untouched.

At the heart of JOALI BEING is modern science and long-honoured traditions aimed at guiding residents on a journey of self-discovery and transcendence. Alongside 33 design-led beach villas, 35 over-water villas surrounded by crystalline lagoons amidst glorious tropical nature, and a plethora of elevated treatment rooms, the sanctum encompasses an on-site herbology centre, AKTAR, allowing JOALI BEING’S herbalist to create natural remedies, spices and essential oils for guests to enjoy. FLOW is the island’s open-plan interactive dining space, featuring three signature kitchens: SU serves ocean-to-table pescatarian cuisine; Plantae offers nourishing vegetarian and vegan gastronomy; and B’Well features JOALI BEING’s signature menu with meat and poultry options. The destination is also home to SAI tea lounge where guests are invited to explore an incredible range of homemade brews and take part in traditional ceremonies hosted by JOALI BEING’s resident tea sommelier. Meanwhile, Teppanyaki offers a private dining experience that celebrates the ‘Joy of Weightlessness – a feeling of freedom, lightness and wonder’. Astonishing views of the Gate of Zero set the stage for artistry at the grill, or guests may opt for dining on a secluded sea bank or within the bespoke wooden carved Turtle Treehouse.

Carolyn Martin brings Creation Estate wines to Holiday Inn Resort Kandooma

Holiday Inn Resort Kandooma Maldives is set to host an exclusive winemaker’s dinner on 12 November 2025 at its beachfront restaurant, The Asian Kitchen. The evening will feature special guest and vineyard co-owner Carolyn Martin, who will present a curated selection of vintages from Creation Estate, one of South Africa’s most recognised wineries, located in the Hemel-en-Aarde Ridge.

Guests will be served a four-course menu, with each dish paired with a premium Creation wine to showcase the estate’s elegance and terroir-driven character.

Founded by Jean-Claude and Carolyn Martin, Creation has gained international recognition for its innovative approach, commitment to environmental stewardship and its Chardonnay and Pinot Noir. Since its beginnings in 2002, when virus-free vines were first planted, the estate has gone on to be named among the Top Ten of the World’s Best Vineyards and Number One in Africa, reflecting a philosophy rooted in respect for nature, craftsmanship and ongoing innovation.

Situated against the backdrop of the Babylonstoren Mountain and influenced by cooling ocean breezes from the nearby Atlantic, Creation benefits from ancient soils, diverse flora, favourable temperatures and carefully managed vines, resulting in expressive wines with purity, balance and finesse.

“When you are harvesting quality fruit, guide it gently through the winemaking process so as to preserve the sense of place,” said Creation Cellarmaster, Jean-Claude Martin.

Holiday Inn Resort Kandooma Maldives’ Director of Culinary, Restaurants & Bars, Chef Eddie Ng, has created a refined menu to complement the wines. Guests will begin with a choice of Crispy Oysters paired with Creation Rosé 2024 or Shrimp Ceviche paired with Creation Sauvignon Blanc 2023. The soup course features a Vietnamese favourite, Rolled Salmon with Dill in Clear Soup with pineapple and tomato, served with Creation Viognier 2024.

For the main course, diners may select Lemongrass Chicken Dumplings paired with Creation Chardonnay 2023 or Slow-braised Beef Short Rib paired with Creation Pinot Noir 2023. The dinner concludes with a Chocolate Marquise with Cherry Compote and Hazelnut Praline, matched with Creation Syrah Grenache 2022.

The event is open exclusively to in-house guests of Holiday Inn Resort Kandooma Maldives and is priced at US$119 per person. Guests on all-inclusive packages or dinner-inclusive meal plans at The Asian Kitchen are eligible for a special discounted rate of US$69++ per person. The resort currently has availability on 12 November, with a range of villa options on offer for those wishing to attend this guest-only occasion.

SO/ Maldives unveils Creation Wines five-course pairing evening

SO/ Maldives will host an exclusive Wine Dinner in collaboration with Creation Wines, led by Carolyn and Glenn Martin, founders of the South African winery. The event will take place at Lazuli Beach Club on 5 November 2025, from 18:30 to 22:00, with a beachfront setting designed for an evening of fine wine, culinary craft and storytelling.

Guests will be served a five-course menu, each course created by the SO/ Maldives culinary team to complement selected vintages from Creation. From the first pour to the final course, the pairings highlight a shared commitment between SO/ Maldives and Creation Wines to creativity, authenticity and the art of living well.

Guided by Carolyn and Glenn Martin, the evening will explore the relationship between food and wine, with insights into their winemaking approach, the vineyard, and their journey from South Africa’s Hemel-en-Aarde Valley to the Maldives.

Creation Wines combines an ancient landscape with a modern estate driven by innovation. Its team draws on the Hemel-en-Aarde terroir to produce wines that aim to be vibrant and expressive, with each bottle telling a story of balance and harmony.

Atmosphere Core, BBM to host Michelin-starred events with Chef Pasquale Palamaro

Atmosphere Hotels & Resorts, a brand by the international hospitality company Atmosphere Core, presents “Mediterranean Soul, Maldivian Heart”, a culinary series in November 2025 that brings international expertise to the Maldives. Italian One-Michelin-Star Chef Pasquale Palamaro will host events at RAAYA by Atmosphere, VARU by Atmosphere, and in Malé City, where Bestbuy Maldives (BBM) will run a special masterclass session for the country’s culinary professionals. The series gives travellers and hospitality professionals a chance to connect, collaborate, and share their love of food.

Chef Pasquale Palamaro, celebrated for his artistry at Indaco Restaurant in Amalfi, Italy, shares, “Cooking, to me, is a dialogue with nature — an art of transforming simplicity into beauty. Bringing Indaco’s spirit to the Maldives is an opportunity to merge two coasts and two cultures through taste, technique, and emotion.”

At RAAYA by Atmosphere, on 18th and 19th November, guests will savour specially curated harvest-to-table-to-soul experiences. On the first day, hands-on farm activities, introduce guests to the cultivation of local produce, followed by a five-course dinner at Seb’s Farm showcasing freshest seasonal ingredients. The following day, guests can participate in a masterclass led by Chef Pasquale, learning firsthand the techniques and philosophy behind his creations, before enjoying an exquisite five-course dinner at The Village restaurant.

Following the RAAYA experience, Chef Pasquale will host an exclusive Culinary Masterclass organized by Bestbuy Maldives (BBM) on 24th November at Hulhule Island Hotel (HIH). The event will bring together 100 chefs from leading resorts and restaurants across the Maldives for an immersive, learning experience. Participation will be on a registered, first-come, first-served basis, ensuring dedicated interaction and focused learning from the Michelin-starred chef himself.
